In ArdBia we pride ourselves on sustainability both in the kitchen and front of house. From using recyclable paper napkins in the daytime to reusing wine lists and menus as order pads to save paper. There is minimal waste in the kitchen as animal and fish bones are used for stocks, soups and broths.
We also have continuity in our breakfast, lunch, brunch and dinner menu allowing us to use ingredients in a variety of ways to reduce waste. Our coffee grind and egg shells are taken to The Burren where they are used on the soil in Summerage's veggie patch, amongst other practices. Won 'Best Sustainable practices in Connacht 2022.' Irish Restaurant Awards.
Summerage
With uninterrupted views of The Burren and an extensive hazel forest, the Summerage has been established to respectfully honour this land of unique topography. With plans to support and harness further what is naturally there. Steeped in history, Summerage celebrates a simple and slower pace of life. Here, nature takes centre stage to make the space habitable in a modern and ecological way.
Guardian Bia provides fruit and vegetables from May to November and then our glass house provides winter vegetables and leaves to carry us through the cold months while our beds are put to bed and allowed to follow with locally gathered seaweed.
We have secured considerable local forestry grants from Burren Beo and Forestry Ireland to reforest the extensive 32 acre allotment. Most trees will produce fruit to supply Ard Bia.
Our happy 60k Native Irish Black Bees in our bee hives increase Biodiversity and pollinate our land with honey to sell and use in Ard Bia.
We were lucky to secure a pond grant. This will be erected in the valley to further increase water + land wild life
Our two miniature horses Holly and Mr. Crunch makes everything better while also fertilising our land.
Suppliers
Creating a localised economy and supply chain is just one of the elements to Summerage. In time, the property structures will be restored for local food and biodiversity retreats, to bring people together through connection, creativity, well-being and finding a place of calm in a very busy world.

Spirit
We use small batch Irish spirits to create beautiful pre-dinner drinks. Which reflect the seasons, using fresh herbs from local gardens and tinctures from American Apothecary.
Wine
We work with Wild Wines, Le Caveau and Sheridans to curate a wine list that focuses on natural, biodynamic and organic wines. We focus on independent winemakers with sustainable practices. Our wine list reflects the ethos of Ard Bia - a little bit unusual, encompassing joy and community with love for the planet.
